Ingredients (for about 15 blini) :
- 320 g flour
- 500 ml of milk
- 3 eggs
- 15 g of fresh yeast
- 100 g cream
- 20 g of melted butter
- 1 tablespoon sugar
- 1 teaspoon of salt
We start by preparing the yeast. Put 30 ml of warm water in a large bowl and crush the yeast into pieces, then let it rest for 5 minutes.
Then mix well, pour 250 ml of warm milk over the yeast and then mix everything well again.
Add the flour little by little and mix well with a fork.
Cover the bowl with the dough with cling film and let it rest for about 3 hours in a warm place.

Then add the remaining 250 ml of warm milk to the well-puffed dough and mix with a fork.
Separate the egg whites from the yolks and beat the egg whites well.
Add the yolks to the dough, add salt, sugar, melted butter, cream and mix everything well.
At the end, add the beaten egg whites, very lightly, with a fork, without losing the effect of fluffy dough.

Cover everything again with cling film and let everything rest again for half an hour.
Take a medium frying pan, heat well over medium heat, grease with a little oil or butter and add a dough polish. You don’t need to spread it all over the pan to keep it fluffy.

Allow to brown well on both sides.
Then serve as your inspiration tells you.
I really like smoked salmon, sour cream and lemon juice. And a little dill on top.
Or with one eye on top.
Or sweets: with nutella, jam or simply with lemon juice and a little sugar on top.
